For weeks i have been searching and trying out homemade mayo recipes. Trying to replace the over-processed, GMO-laden goop in the stores in a healthy way that tastes great took a bit of doing, but I finally found the perfect proportions and oil to use, and all you need is a blender or food processor and about five minutes.
Walnut oil is heart healthy, with a very mild nutty flavor and is relatively easy to find and affordable. Try to find and use pastured eggs, too, which are much higher in the restorative Omega-3 oils commonly taken as supplements. Walnut oil is also a good source of vitamin E, B1, B2, B3, niacin, iron and calcium, as well as trace minerals like selenium, phosphorus, magnesium, and zinc.
Eating just 2 tablespoons of mayonnaise made with walnut oil – the serving size used on most sandwiches or on salads – is the equivalent of a fish oil supplement and some multivitamins! Talk about a great way to nourish yourself!
HEART HEALTHY MAYONNAISE
Ingredients
- 1 tbsp Dijon mustard
- juice from half a large lemon
- 1 large egg, preferably high in Omega-3
- 1 1/4 c walnut oil
Instructions
Combine all ingredients but the oil in the work bowl of your food processor or blender. blend until fully incorporated and a bit frothy. With the blade still going at full speed, slowly drizzle in the oil in a very thin stream until it is completely combined and emulsified. Salt to taste and blend a bit more to incorporate the salt.
