Back by popular demand, Foothills Meats, in collaboration with HiWire Brewing, presents The Butcher’s Table series, with the inaugural meal Thursday, May 26 at HiWire Brewing’s Big Top Production Brewery located at 2 Huntsman Place, Asheville, NC.
Renowned chef Steven Goff, former co-owner of King James Public House, Asheville and head butcher at Standard Foods of Raleigh, will be kicking off the six month series. Foothills and HiWire will host Chef Goff and only 24 guests for an intimate five course meal paired with HiWire’s award winning beers.
Casey McKissick, owner of Foothills Meats, notes “guests can expect a meat centric, family style meal with seasonal and hyperlocal vegetable side dishes. Foothills has incredible access to local farms and food artisans, and the result is that we get our ingredients four to twenty four hours before they appear on the menu. Guests continually remark that this is one of the best dining experiences in Asheville, with unprecedented access to the chefs. And it only happens a few times a year.”
The Butcher’s Table series is an intimate and unique dining experience that also serves as an education in “nosetotail” eating. Each course will be curated by a chef, butcher, and brewer to engage guests throughout the evening.
The series will run May through October and feature some of the most fascinating butchers and chefs in the southeast. At only $67 per person, tickets sell very quickly. All dinners will be hosted at HiWire Brewing’s Big Top location in a private brewhouse area.
